Monday Menu (Week of 4/2/17)


This week's menu is featuring some batch cooking. On Sunday, I'm going to make a LOT of french toast and then freeze half of it for later in the week. I'll report back on how successful this effort is.


Sunday
  • Breakfast - french toast with sausage
  • Lunch - leftovers from Sat. dinner / sandwiches
  • dinner - lasagna with salad


Monday
  • breakfast - cereal
  • lunch - leftovers
  • dinner - hamburgers, fries & carrot salad


Tuesday
  • breakfast - french toast
  • lunch - chicken salad wrap with lettuce & fresh veggies
  • dinner - pork enchiladas with salad & rice / quesadillas for kids


Wednesday
  • breakfast - cereal
  • lunch - leftovers
  • dinner - moroccan beef & sweet potato stew with couscous


Thursday
  • breakfast - pancakes
  • lunch - shaped sandwiches with veggies and chips w/ hummus
  • dinner - bbq pulled pork pizza w/o onion and mozzarella sticks


Friday
  • breakfast - cereal
  • lunch - leftovers
  • dinner - curry chicken with rice and cucumber yogurt salad


Saturday
  • breakfast - pancakes
  • lunch - leftovers / sandwiches
  • dinner - meatloaf, garlic smashed cauliflower & squash with maple syrup


The recipes for the lasagna, enchiladas (well, the enchilada recipe calls for chicken but I have a bunch of pulled pork left), and the moroccan beef stew are on my Pinterest cooking page.
